My perfect Sunday afternoon consists of country music, cutting out magazine recipes, hanging with my puppies and drinking down the perfect strawberry drink.
I have never heard of lassi's before so I looked it up and found out that a Lassi is a popular and traditional Punjabi yogurt-based drink of India. A sweet lassi, different than the traditional Indian spiced lassi, is blended with sugar or fruits instead of spices and that was exactly what I was in the mood for.
Being that it's a lazy Sunday, I normally get into that mood where I don't really want 'lunch' per-say and would rather have something light and filling and that is where this lassi comes in. I had a whole bundle of strawberries still left over after snacking on them all week so this was an easy call.

2 cups whole strawberries, hulled
1 1/2 cups vanilla almond milk
1 cup ice cubes
3 tbsp honey
1/4 cup packed fresh mint
Note: If you honey sits in your pantry and hardens where you can't squeeze it out of the bottle simply put on a pot of water on medium heat for about 3 minutes and the honey should relax and release from the container and pour much easier.
Serve immediately with an extra spring of mint or you can chill your drink for about an hour until very cold.
