After camping this weekend and pigging out on mountains of watermelon I still had a craving for the water-filled melon so what is a girl to do. Having diced up another quarter of a watermelon last night I figured when I got home from work (in this blazing summer heat) I would whip up a light juice cocktail with freshly picked mint for Paul and I and relax on the deck... which is exactly what we did.
The best part about an Agua Fresca is that it is literaly just water and fruit, that's it, and it can be practically any kind of fruit you like (as you would have seen with my last month's post Grape Agua Fresca with Mint). It is the simplist of ingredients but it is down-right delicious and oooober refreshing.
I like to think of it as my little treat that cuts up my work week because you feel relaxed and pampered yet inside you really know just how refreshing, easy and guilt-free it is.
So put your feet up and relax with your friends and loved ones but be sure you make enough fresca to go around because trust me... everyone will be looking for seconds.
Watermelon and Mint Agua Fresca

4 cups cubed seeded watermelon
6 cup water
1/4 cup fresh lime juice
handful of fresh mint, Chopped
splash of Sparking Water
lime slices, for garnish
*add 1/3 cup sugar, if desired
With a juicer (or food processor), add in all the watermelon until fully liquified. Combine the watermelon juice with the water and stir together. If liquid has remaining chunks from the processor, strain the mixture into a large container and disregard anything that won’t strain.
Once the entire mixture has been strained, add the lime juice and mint then refrigerate for at least 2 hours.
When ready to serve, add just a splash of Sparkling water and garnish with a lime wedge.
