Sautéed Shallot and Tomato Salad

What a nice long weekend we just had. Surprisingly I didn't know my office was closed on Monday so on Friday afternoon I was jumping up and down when I knew we has a long weekend... like a snow day come early {because with the temps rising to mid 40's-50's this week I am sure snow is out of the question}.

Either way it was so nice to relax. 
Plus, did anyone else see the football games on this weekend? 


The 49ers vs Saints on Saturday afternoon was crazy. The last 5 minutes of the game resembled that of a basketball game... touchdown, touchdown, touchdown, it was unbelievable! 

and we WON!!! This is the year for San Fran baby!!!

This weekend also had a lot of recipe testing going on. I saw some amazing things on a few friends blogs that I just had to test out, including some healthy frozen yogurt and a delicious chicken sandwich that is probably going to be on my lunch list for the next month.

Don't worry, I will absolutely be posting those recipes later on this week. Also, I have a very special guest blogger coming to visit us here on Thursday sharing a surprise delicious recipe, so check back later on this week.

Anyways, so continuing my food craze... "new year, new you" is still in full effect of healthy dishes and new fun ways to eat your veggies. I have a huge obsession with shallots {since I finally found out what they were} and have been cooking with them as much as I can ever since.

I was really short on time the other night when we were making burgers {no buns} so I picked through the fridge and remember seeing a little thrown together concoction with my favorite ingredient...wine

Keeping with the theme this month, simple, this side sautéed was delicious, colorful and so easy to toss together. When the cherry tomatoes pop in your mouth and you get that bursting rush of juice, mix it with the caramelized shallots  drunk in white wine... you will be very happy.
Sautéed Shallot and Tomato Salad
Recipe and photos by A Healthy Jalapeño 

1 tbsp olive oil
4 shallots, quartered
2 pints cherry tomatoes

1/2 cup dry white wine
sea salt 

freshly cracked black pepper

Heat the oil in a large skillet over medium-high heat. Add the shallots and cook, stirring occasionally, until they begin to soften, 3 to 4 minutes. Add the tomatoes and cook, stirring, until a few of the tomatoes begin to burst. Add the wine and cook until nearly evaporated, 4 to 5 minutes.

Season with salt and pepper and serve.

What a unique recipe! It sounds really good and I'll have to try it. And, yes, I watched all the football games, just wish the Pack had won even though Da Bears are out of it. I'm new here to your blog and will enjoy following to see what's next. Good blog!!!

Delicious little side you've created! Love the use of shallots and of course, the wine. I can see this as a side for just about anything. Beautiful pictures!
