Applesauce Muffins with Cinnamon Streusel Crumble {and Our Giveaway Winner!}

I love Sundays!!!!

There is just something about Sundays that make me smile. Sundays are normally days without plans, big events, or get togethers {unless it's football season which is still ok in my book} so what's not to love.
 What I love even more is the food. Sundays are normally Paul and I's cheat day because we've eaten good all week and it's the day to relax and enjoy. It's the one day a week we get to sleep in almost all the time and make a full blown breakfast with all the delicious trimmings.

.... like BACON!
Well I was given a homemade jar of applesauce by a volunteer of mine as a gift and I was so excited to try out this recipe and make applesauce muffins. 

So good.
 They had the most amazing streusel crumble on top and the muffins were light and fluffy. Perfect for Sunday morning breakfast... plus they made the house smell like heaven.
 Paul and I popped a muffin {or two} and were getting ready for Sunday laziness at it's best with the puppies and a movie.

Sometimes all you need is a relaxing day to kick your feet up... with a little Apple Streusel.
Applesauce Muffins with Cinnamon Streusel Topping

Recipe adopted by Southern Living
Yield: Makes 1 dozen
Total: 48 Minutes

4 cups all-purpose baking mix
1/2 cup sugar
2 teaspoons ground cinnamon
2/3 cup chunky applesauce
1/2 cup milk
1/4 cup vegetable oil
2 large eggs
Cinnamon Streusel Topping

Preheat oven to 400°. Whisk together baking mix, sugar, and cinnamon in a large bowl; make a well in center of mixture.

Whisk together applesauce and next 3 ingredients in a small bowl; add to sugar mixture, stirring just until dry ingredients are moistened. Spoon batter into a lightly greased 12-cup muffin pan, filling almost completely full. Sprinkle Cinnamon Streusel Topping over batter.
Bake at 400° for 18 to 20 minutes or until a wooden pick inserted in center comes out clean and tops are golden brown. Cool in pan on a wire rack 5 minutes. Remove from pan to a wire rack.
Cinnamon Streusel Topping 
1/3 cup granulated sugar
1/4 cup firmly packed light brown sugar
3 tablespoons all-purpose baking mix
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted

Whisk together first 4 ingredients until blended. Stir melted butter into sugar mixture until well blended and crumbly.

I recently ran across your blog and LOVE it. I am trying several of your receipes but on this one you say "baking mix". I am not sure what that is. Like Bisquick? Or an actual product that I can purchase at the grocery store.
