Peanut Butter Jelly Time Cupcakes {Guest Post}

It's Friday... it finally came. It's been such a long week and I just can't wait for a weekend of relaxing with my pups and enjoying good company for the football game. 

I also have been drooling over my wonderful guest blogger and her treat she is sharing with us all today and I am so happy I can finally reveal it to you all. I have been following Grace and her beautiful blog almost from the start of my blogging lifetime {about 1 year}. As Grace says, 'You've heard it before--American by birth, Southern by the grace of God.' and true to that she sticks. A Southern Grace is Graces little spot on the web since 2007 where she shares some of the most amazing desserts and treats that have me drooling at 7am for a breakfast cupcake. On top of her amazing recipes, she has a sense of humor like no other. Just wait till you start reading all of her cupcakes and dessert titles, too adorable and funny for words.

Trust me, you will see what I am talking about. She is hysterical.

So, for your morning sweet-tooth I introduce you to the beautiful Southern Grace!

Brace yourself, folks. I'm about to gush and fawn all over the place. I've only been a loyal reader of Laura's blog for a short time, but in those weeks, I've been amazed by the inventive and delicious things she creates. What's more, she writes about them in a most delightful and enjoyable way. I'm honored to be writing a post for her, and I look forward to more of her brilliance in the future.
Many people get songs stuck in their heads, and often, it's not so bad. Sometimes, though, it'll drive a person to the edge of sanity. Every time I see or hear the words "peanut butter and jelly," a certain little ditty pops into my head.

Every time.

What's worse is that it stays in my head...for hours. At least I know I'm not the only one to whom this happens. Other people are stuck on the the jingle as well.

Needless to say, "it's peanut butter jelly time" ran through my mind constantly as I a)thought about how best to approach making these cupcakes, b) actually made these cupcakes, c)ate these cupcakes, and d)wrote about these cupcakes. Yes, it is, in fact, peanut butter jelly time right this second.

Peanut Butter Jelly Time Cupcakes
(makes 18 or so)

1 3/4 cups all-purpose flour
3/4 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
6 ounces (1 1/2 sticks) unsalted butter, softened
1 1/3 cups sugar
2/3 cup creamy peanut butter
3 large eggs
1/2 cup sour cream
1/2 teaspoon pure vanilla extract

6 ounces cream cheese
1/3 cup powdered sugar
1/2 teaspoon salt
1 cup creamy peanut butter
1/2 teaspoon vanilla extract
1/2 cup heavy cream

1 cup jam of choice (I used some rockin' raspberry preserves)

Preheat oven to 350 degrees. Line standard muffin tins with paper liners.
Whisk dry ingredients in a large bowl. Cream the butter and sugar with a mixer until light and fluffy. Add the peanut butter. Add the eggs, one at a time, beating after each addition. Mix the sour cream and vanilla. Add the dry ingredients to the mixture and beat, being sure to scrape the sides of the bowl. Divide the batter among the muffin cups, filling each 2/3 full.
Bake the cupcakes until testers inserted into centers come out clean, about 20 minutes. Let cool in tins on wire racks.

To make the frosting, beat the cream cheese and powdered sugar with a mixer on medium speed. Add the salt, peanut butter, and vanilla. Whisk or beat the cream until soft peaks form, and then fold into the peanut butter mixture.

Once the cupcakes are cool, frost tops with peanut butter frosting. Place a dollop of jam in the center of frosting. Eat whilst listening and dancing around to your favorite jingle!
