Carrot Cake Cookies

Happy almost new month! 
I can't believe summer is winding down but I have to smile when I look back at all the beautiful weather we've had. Although I shouldn't speak too, soon as my cousin mentioned, we have a couple weeks left of blue skies and sunshine before the leaves start to chance colors and the temp cools off. 

Never the less, here we are a month later at SRC revel day, and another month closer till my husby comes home from overseas.
 
For one reason or another, I seem to use SRC as my time to indulge and make a delicious sweet treat that I otherwise normally wouldn't have. 

This month I was introduced to Megan from Cooking Whims. She is a fabulous blogger out of Boston area and she has some killer recipes that I was more than happy to check out. I was torn between two but ended up landing on these carrot cake cookies. I mean, who can resist carrot cake, clearly I can't... my eyes couldn't turn away.
As I've mentioned so many times before, fall is my absolute favorite season. The fresh crisp air, the foliage here in the North East, pumpkin spiced coffee, flannel button-ups and lot's of football. This year is extra special because I will be celebrating the return home of my amazing husband from another deployment overseas. And with fall being his favorite season as well, depending on how much snow piles up in the winter, he will be home to catch the end.
These cookies will absolutely be on my list of things to make my husby once he is home. While reading my blog oversea's and seeing what I have been up to, I am sure he will have a cooking recipe list of his own of yummies he would like us to make. These carrot cake cookies are so moist and filled with all the spiced up flavors of fall. They worked so well as a brunch treat and for Sunday dessert with the family. My intrigue into this cookie recipe above all others was well worth it. It was only fitting to nibble on a few with a cold Shipyard Pumpkin Ale to ring in the fall season. Fabulous. 


Carrot Cake Cookies

Ingredients
2 cups whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
2 cups oats
3/4 cups butter, softened
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1 cup shredded carrots

3/4 cup powdered confectionary sugar
3 tbsp almond milk

Whisk together the flour, baking powder, baking soda, salt and spices until well blended. Set aside.

Beat the butter and sugars until they are light and fluffy. Add the egg and vanilla and continue beating until smooth and well blended. Slowly beat in flour mixture until it is mixed well. Stir in the oats and carrots.

Cover the dough with plastic wrap and refrigerate until it is firm, about 1 hour. After the dough is chilled, preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. 
In the meantime, whisk together confectionary sugar and almond milk to form a glaze. Add more sugar depending on how thick you would like your glaze.

Drop cookie dough onto sheet and bake for about 13-15 minutes or until the edges are golden brown and the centers are crisp. Cool on a wire rack before eating.

I was so excited when I saw your response to why you wouldn't be participating in October :) We just hit the halfway mark in my husband's third deployment and I'm so ready for homecoming already. I just hope the snow holds off a little so I don't have to shovel the worst of winter LOL

These cookies look so good. I love carrot cake, it's probably my favorite cake :)
